Cultures and Heritage of Food

The objective of this master’s degree programme is two-fold: train students in and through research in the field of food studies and develop their skills in terms of project management in relation to promoting, emphasising and developing - in the fields of food culture and heritage - gastronomy, tourism, local produce and more generally, local, sustainable and healthy food practices.

This curriculum is focused on growing socio-economic sectors in relation to the cultural, political and social issues of food and gastronomy. It draws on the momentum created by the presence in the City of Tours of part of the European Institute for Food History and Cultures, which led to the UNESCO classifying the “Gastronomic Meal of the French” as Intangible Cultural Heritage of Humanity. It also benefits from the presence of the Cité Internationale de la Gastronomie and of the Pôle Alimentation's interdisciplinary research activities at the University of Tours, which is a unique programme in France. The synergies created by these converging initiatives offer numerous opportunities to be part of projects that are directly related to these subjects.

Master 1

First semester

  1. Common HCP and HN degrees core courses : General introduction to the training: Research, Heritage, Digitisation (16 hours)
  2. Common HCP degree core courses: Research methodology and digital tools (42 hours)
  3. Capacity-building module: Seminar and digital tools (18 hours)
  4. Module 1: System dynamics and transformations of food crops (history, long term) (60h)
  5. Module 2: Food as heritage (48 hours)

Second semester

  1. Common HCP degree core courses: Research methodology and digital tools (46 hours)
  2. Capacity-building module: Workshops and advanced studies (58 hours)
  3. Module 3: Contemporary food challenges (60 hours)
  4. Module 4: Development project, mediation, education (48 hours)
  5. Professional training module (10 hours)
  6. Feasibility study report

Master 2

First semester

  1. Common HCP degree core courses: Research methodology and digital tools (42 hours)
  2. Capacity-building module: Research, Digitisation or entrepreneurship pre-specialisation (30 hours)
  3. Module 5: In-depth studies: sectors, products and challenges (60h)
  4. Module 6: Development of a product or service project (48 hours)

Second semester

  1. Training at Tours and research paper (78 hours) OR Course abroad and research paper (78 hours) OR Long-term internship and internship paper
  2. Professional training module (10 hours)
